Quick Chicken Cordon Bleu

  • 1 pound chicken breasts
  • salt and pepper
  • 1 1/2 tablespoon olive oil, divided
  • 1/4 pound shredded Gruyere or Swiss cheese 1/2 cup
  • 4 tablespoon cream cheese 1/pound
  • 1/4 cup bread crumbs
  • 1 tablespoon thyme or parsley
  • 1/2 cup chopped ham 1/5 pound
Directions

1. Cut the chicken breasts in half length wise to make fillets. Season chicken with salt and pepper.
2. Brown both sides of chicken in skillet with oil, about 3 minutes per side.
3. Move chicken to oven safe dish with all sides of chicken touching each other.
4. Mix all cheese in a bowl.
5. In a separate bowl mix breadcrumbs, pepper, thyme or parsley, and 2 tsp oil.
6. Cover the chicken with cheese then top with ham then breadcrumb mixture.
7. Bake at 400°F for 20 minutes.
