One Pot Lemon Kale Pasta

  • 14 ounce spaghetti or linguine
  • 14 ounce grape tomatoes
  • 2 large lemon zest
  • 7 tablespoon olive oil
  • 2 teaspoon sea salt
  • 14 ounce kale or spinach
  • Parmesan cheese
Directions

1. In a large pot boil 1 quart of water.
2. Add pasta, cut in half tomatoes, zested lemon, oil, and salt.
3. Bring back to boil and occasionally stir while boiling for 6 minutes.
4. Remove tough stalks from kale or spinach and coarsely tear the leaves. Add the leaves and cook an additional 2 minutes.
5. Optionally top with Parmesan.
